Mole sauces, the culinary symbol of Mexican cuisine, are based on the traditional recipes that originated with the indigenous peoples of Mexico. These sauces included ingredients such as pine nuts, pumpkin and sesame seeds, chili peppers, cilantro, plantains, cinnamon and chocolate. Casa Mole follows in the traditions of those early Mesoamerican kitchens.

Making authentic mole sauce from scratch can be a challenge. The ingredients are many and sometimes difficult to find. And the preparation time is exceedingly long. Even a devout foodie can become discouraged. Let us do the work,

MOLE NEGRO: THE DARKEST & MOST COMPLEX MOLE

With the arrival of the Conquistadors, a variety of Old World spices were added to the Meso-american sauces made from an array of chili peppers, nuts, and other native ingredients. Combined with chocolate, these complex blends created a number of unique sauces that have become the culinary symbols of Mexico.

According to legend, Mole Negro originated in Oaxaca, the “Land of the Seven Moles.” Mole Negro is the darkest and most complex mole. This recipe has been handed down through the family of the chef who has created our sauces. We are proud of this rich mole and the long tradition from which it comes.

OUR MOLE ROJO IS BASED ON AN OLD FAMILY RECIPE FROM PUEBLA

Legend has it that Mole Rojo was first made by the nuns of Santa Rosa in colonial Puebla, in 1680. Upon hearing that the archbishop was planning a visit, the nuns went into a panic because they were poor and had little to prepare. They brought together what little they had, including chili peppers, spices, day-old bread, nuts, a little chocolate, and made a sauce. They served it over turkey and the archbishop loved it. When the nuns were asked the name of the dish, they replied, “We made a mole”. 
Our Mole Rojo is based on an old family recipe that originated in Puebla. We are proud of this rich and flavorful mole and invite you to try it.

OUR CASCABEL SAUCE IS IDEAL FOR HUEVOS RANCHEROS, ENCHILADAS,
AND MORE

Cascabel means "little bell" from the sound of the rattling seeds inside the dried chili. These special chilis are small with a rich brown color. They have a woodsy and smokey flavor, with nutty and tobacco overtones. The sauce made from these chilis is unique, and like our other sauces, is rich and complex, with a slightly sweet finish. You will notice its medium hot spiciness blends beautifully with the resonant flavors of the blend.
